Method
- Heat olive oil in a frying pan over medium heat.
- Add sweet potato sticks and cook for 6–8 minutes until slightly softened.
- Add sliced onions and cook until they become translucent.
- Stir in the chopped tomato and diced turkey or ham. Cook for 3–4 more minutes.
- Season with salt and black pepper to taste.
- Remove from heat and plate the mixture.
- Top with fresh spinach and sliced avocado. Serve immediately.
