Ingredients
  

  • 1 medium sweet potato peeled and cut into sticks
  • 1 small onion sliced
  • 1 cup cooked turkey or ham, diced
  • 1 small tomato chopped
  • 1 tsp olive oil
  • salt to taste
  • black pepper to taste
  • 1 handful spinach leaves fresh
  • 1 avocado sliced

Equipment

Method
 

  1. Heat olive oil in a frying pan over medium heat.
  2. Add sweet potato sticks and cook for 6–8 minutes until slightly softened.
  3. Add sliced onions and cook until they become translucent.
  4. Stir in the chopped tomato and diced turkey or ham. Cook for 3–4 more minutes.
  5. Season with salt and black pepper to taste.
  6. Remove from heat and plate the mixture.
  7. Top with fresh spinach and sliced avocado. Serve immediately.
