Ingredients
  

  • 4 slices Seeded bread or small rolls Toasted
  • 200 grams Cooked prawns Peeled and deveined
  • 1 Red onion Thinly sliced
  • 1-2 Red chillies Sliced thinly
  • 4 tbsp Tomato or chilli relish Your choice
  • 1 handful Fresh herbs Such as mint or coriander, chopped

Equipment

  • 1 Baking tray For toasting the bread
  • 1 Knife For slicing ingredients

Method
 

  1. Preheat your grill or oven to toast the bread slices until golden and crisp.
  2. Spread a generous layer of tomato or chilli relish on each toasted bread slice.
  3. Top with cooked prawns, arranging them evenly.
  4. Add thinly sliced red onion and fresh chopped herbs.
  5. Finish with sliced red chillies for a spicy kick.
  6. Serve immediately while the bread is still crisp.

  • Adjust the chilli quantity to your heat preference.
  • You can use any relish you like, from smoky tomato to spicy chilli.
